Our refrigerator is overflowing with quail eggs… We have more than we know what to do with. Time to get creative! On the menu for tonight:quail egg salad.
This recipe was quick and easy to put together. Great for sandwiches or on crackers. The fresh dill really made a difference in the taste and it came straight from our garden!
30 quail eggs (can substitute with chicken)
2 sprigs fresh dill
1/4 onion chopped
1 tsp Himalayan salt
2 tsp pepper (to taste)
1 tbs lime juice
4-5 dill pickles chopped
1/4 cup mayonnaise
1. Hard boil eggs. Quail eggs only take about 2-3 minutes to hard boil. Once the eggs have been cooked, immerse them in an ice bath to make peeling easier.
2. Chop onions, pickles and eggs into smaller pieces until desired texture is achieved.
3. Chop dill and add salt, pepper, lime juice and mayonnaise. Mix it all together and there you have it! A wonderful dish to bring to a party or just for a light meal.
